Rapini is not a very commonly used vegetable in the western world. Many people may not like the slightly bitter taste but choosing fresh full bundles with dark green buds and preparing it the right way, this vegetable is very versatile and delicious.
Rapini (Broccoli Rabe)
When purchasing rapini, choose bundles that are bright green – yellow leaves or buds will indicate they are not fresh. Also they should not have a smell to them as this will also indicate that it has been sitting for a while. To prepare the rapini, cut off the botton part of the stem just to remove any tougher part. Cut a slit through the stem so that it will help to cook it at the same time as the leafy parts.
