Rapini With Garlic
Ingredients:
- 1 large bunch of rapini
- 2 tsp salt
- 3 cloves of garlic
- 1 tsp of chili flakes
- 3-4 tablespoons good olive oil
- Wash and prepare the rapini by cutting of the harder ends of the stems
- Bring a large pot of water to boil. Add the rapini and salt and boil until steps are just tender.
- Drain the rapini once cook but reserve 1/2 cup of the liquid.
- Finely mince the garlic
- Heat the oil in a large pan. When oil is very hot drop in the garlic and fragrant the oil for just a few seconds. Be careful not to burn the garlic.
- Carefully add the rapini and reserved water.
- Stir the rapini into the oil and additional oil if needed. Serve warm with some crusty bread.
