Ingredients

  • 2 cups Fresh sliced strawberries
  • 3/4 cups unsweetened shredded coconut
  • 1 tablespoon maple syrup
  • vanilla
  • 1 cup Greek yogurt

Instructions

  • Lightly blend all ingredients in a food processor to make a fresh, crunchy center for this frozen chocolate treat.
  • Melt enough dark chocolate to fill your molds - a loaf tin works well too! I added a few teaspoons of coconut oil to 6 squares of chocolate over a double boiler.
  • Once the mold is covered in chocolate add the filling and then brush a thin layer of chocolate to coat.
  • Freeze for at least 4 hours.
  • Remove from the freezer and let stand a few minutes before enjoying!
