Mini Pineapple Loaves

Delicious little cakes filled with fresh pineapple and coconut for a great tropical flavor!

Ingredients
  

  • 2 cups of fresh pineapple
  • 3/4 cup of sugar
  • 2 eggs
  • 1 and 1/2 cup of flour
  • 1 tsp of baking powder
  • 1/2 cup unsweetened coconut
  • 1 tsp of vanilla
  • 1 tsp of rum optional

Instructions
 

  • Cut, core and chop the pineapple and place it in a blender with the eggs and sugar.
  • Blend until smooth.
  • In a large bowl sift the flour with the baking powder.
  • Fold in the blended ingredients. Stir in the coconut and flavorings.
  • Careful not to over mix.
  • Place in a loaf pan, muffin pan or mini loaves pan, that has been greased and floured.
  • Top with additional pineapple chunks and coconut if desired..
  • Bake at 350 for about 20 minutes.
