Mini Pineapple Loaves
Delicious little cakes filled with fresh pineapple and coconut for a great tropical flavor!

Ingredients
- 2 cups of fresh pineapple
- 3/4 cup of sugar
- 2 eggs
- 1 and 1/2 cup of flour
- 1 tsp of baking powder
- 1/2 cup unsweetened coconut
- 1 tsp of vanilla
- 1 tsp of rum optional
Instructions
- Cut, core and chop the pineapple and place it in a blender with the eggs and sugar.
- Blend until smooth.
- In a large bowl sift the flour with the baking powder.
- Fold in the blended ingredients. Stir in the coconut and flavorings.
- Careful not to over mix.
- Place in a loaf pan, muffin pan or mini loaves pan, that has been greased and floured.
- Top with additional pineapple chunks and coconut if desired..
- Bake at 350 for about 20 minutes.
