Rapini With Pasta
Ingredients:
- 1 large bunch of rapini
- 2 tsp salt
- 3 cloves of garlic
- 1 tsp of chili flakes
- 3-4 tablespoons good olive oil
- 500 grams pasta such as penne or farfalle
- 1/2 cup parmesan cheese
- Wash and prepare the rapini by cutting off the hard bottom part of the stems. Boil a large pot of water and add salt. Add the pasta to the salted water and bring it back up to a boil. Add the rapini. When the pasta is almost cooked but still has a bite to it ( this is known as "al dente" in Italian), drain the pasta reserving 1 cup of the pasta water.
- In a large pan, heat up the olive oil. When the oil is heated add the garlic and chili flakes and let cook on low heat about 1 minute. Careful not to let the garlic burn.
- Add the pasta and rapini to the hot oil. Add the reserved pasta water and stir until the pasta is well covered in the oil. Let simmer slowly for a few minutes until some of the water is absorbed.
- Stir in the parmesan cheese.
- Serve with extra parmesan and chili flakes
