CousCous Primavera
Ingredients:
- 1/2 cup water
- 3/4 cup diced tomatoes with juice
- 1 cup fine or medium plain couscous
- 1 large zucchini, cut in small cubes
- 1/2 red pepper cubed
- 1 large onion , chopped fine
- 2 cups of broccoli florets, chopped
- 3 tablesppons olive oil
- 1 tsp each salt,pepper,oregano, garlic powder
Method
Combine the water and tomatoes in a small saucepan and bring to a boil.
- Place the couscous in a bowl and pour the hot tomato mixture
over it. Stir to saturate the couscous and let stand .
Heat the oil in a pan. Add the chopped vegetables.
Cook until the vegetables are softened, 8-10 minutes
Add the spices to the vegetables and stir 1 minute
Add the couscous and combine with the vegetables – stir one more minute.
Serve on it’s own or as a side dish to fish or meat!
