Mocha Truffle Cookies

Ingredients:

1/2 cup of butter
1/2 cup semi-sweet chocolate pieces
1 tablespoon of instant coffee crystals or espresso powder
3/4 cup granulated sugar
3/4 cup of packed brown sugar
2 eggs
2 tsp vanilla
2 cups of flour
1/3 cup unsweetened cocoa powder
1/2 tsp baking powder
1/4 tsp salt
1 cup semi sweet chocolate pieces

Melt butter and half cup chocolate pieces in a medium saucepan over low heat until all the butter and chocolate have melted.
Stir in coffee crystals and let the mixture cool about 5 minutes.

Stir in sugars, eggs and vanilla.

Combine the flour, cocoa powder, baking powder and salt in a mixing bowl. 

Sift together. 

Stir the dry ingredients into the coffee mixture. 

Stir in 1 cup of chocolate pieces.

Drop spoons of dough onto cookie sheet.
Shape the dough into small circles and flatten slightly.
Bake at 350 degrees for about 10 minutes. Let them cool on the cookie sheet for one minute and then remove to a wire rack.
