Cod Fish Cakes

Super delicious little fish cake bakes,Great with a summer salad and comes together so quickly with only a few simple ingredients! Works great with any flakey white fish

Ingredients
  

  • 3 or 4 medium potatoes
  • 3 or 4 slices of white fish like cod or haddock
  • 1 egg
  • 1 cup of plain bread crumbs
  • 1/4 cup of fresh chopped parsley/basil
  • 1 tsp of garlic powder
  • 1 tsp of paprika
  • 1 tsp of salt
  • 1/2 tsp of pepper
  • Few tablespoons of olive oil

Instructions
 

  • Preheat your oven to 370°.
  • Boil a medium pot of salted water. Add the potatoes and cook until almost fork tender. Add the fish when the potatoes are almost cooked. The fish will cook very quickly so keep an eye on it - it should not be falling totally apart.
  • Drain the potatoes and the fish well and place in a medium-sized bowl.
  • Add the fresh herbs and spices ,egg and bread crumbs and mix well with a fork until everything comes together.
  • Place olive oil in a rectangular casserole dish. Form patties with the fish potato mixture. You should be able to get about six large patties. Drizzle a little more oil on top and bake for about 40 minutes until golden and cooked through.
