Butterless Brioche

These are a bready sweet bread that can be filled with jams or chocolate hazelnut spread or just made plan. Unbelievably there is no butter in these yet the texture is amazing. What is the secret ingredient? It’s ricotta cheese! They stay moist for a few days and are so good dunked in coffee and warmed up in the oven. Give them a try!

Ingredients:

2 1/4 cup bread flour

2 eggs

3/4 cup warm milk

1/2 cup ricotta cheese

1/4 cup sugar

2 tsp instant dry yeast

1 tsp salt

 

Combine all ingredients except salt in a stand mixer with a hook attachment.

Mix until all ingredients are incorporated.

Add the salt.

Let the machine need the dough until it leaves the side of the bowl. Add a little more flour if the dough is too sticky.

Remove dough from mixer bowl.

Knead on a wooden board dusted with flour for a few minutes until dough is smooth and not sticky.

Place the dough in a lightly oiled bowl and let rise for 1 hour.

 

After dough has risen, roll it out in rectangular shape about 12 inches in length. Cut 6 equal strips. Cut each strip from the top left corner to the bottom right corner to form a triangular shape.  Add your preferred jam at the bottom of each triangle and roll the dough from that end to form a croissant.

Let croissants rise 30 minutes.

Preheat oven to 350 degrees

Brush croissants with beaten egg. 

Bake 35 minutes or until golden
