Asparagus Soup

Make a nice pot on the weekend and warm it up as needed during the week! Chop up some vegetables and have soup ready in no time! Try this delicious version with asparagus which brings so many health benefits and tastes amazing!
Servings 4

Ingredients
  

  • A bunch of asparagus hard bottom part of stem removed
  • 1 shallot or small onion
  • 1/2 yellow or orange pepper
  • 3-4 small potatoes
  • 2 large carrots
  • 2 cups of chicken or vegetable stock
  • Salt and pepper as needed
  • Dried oregano Italian seasonings, powdered garlic,
  • 2-3 tablespoons of olive oil

Instructions
 

  • Wash and chop all vegetables into small cubes.
  • Warm up the olive oil in a dutch oven.
  • Add the chopped shallots and pepper. Saute until softened, about 3 minutes.
  • Add the chopped potatoes and cook 1 minute.
  • Add the asparagus and carrots. Stir and cook a few minutes. Add the salt and pepper and seasonings.
  • Once vegetables are lightly cooked, add the chicken or vegetable stock.
  • Cover and let soup boil for about 15-20 minutes until all vegetables are tender.
  • Adjust seasonings and add more water as needed.
