Crostata is a traditional Italian sweet pie normally filled with ricotta, jams and other fruit fillings. This recipe is a take a twist on the good old apple pie. The crust is slightly more of a biscuit , crunchier texture. The filling is our recipe for homemade apple pie filling which makes this crostata pop with tart sweetness. The filling can be replaced with other combinations in order to make this pie your own! Explore your inner chef and try it!
Place flour on a wooden board , make a well and mix in baking powder and sugar. Add the beaten egg and yolk and vanilla in the center. Add the cold butter and using a scraper work in all the ingredients and mix together until dough starts to form.
Wrap dough in plastic wrap and refrigerate for 1 hour.
Reserve about 1/5 of the dough. Roll out the remaining dough on a lightly floured surface.
Place in a tart pan with removable bottom and trim and adjust the pastry as required.
With the reserved dough, make long strands to place over the pie in a lattice fashion.
Use homemade apple pie filling (see my other post for recipe) to fill the tart
Place the dough strands over the pie an overlap slighlty to form a pattern as you like it.
Bake in a 350 degree oven about 45 minutes until golden
