Ingredients

  • 2 large boneless skinless chicken breasts cut into large bite-sized chunks (approx. 450g / 1 lb total)
  • 2 large organic oranges divided (1 juiced to yield ½ cup; 1 peeled and sliced into thick rounds)
  • 1 medium yellow onion finely diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger finely grated
  • ½ cup low-sodium chicken broth
  • 1 tbsp honey
  • 2 tbsp extra virgin olive oil
  • ⅓ cup pitted green olives
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp ground cinnamon
  • ½ tsp paprika
  • ¼ tsp turmeric
  • 1 pinch saffron threads optional
  • Salt and freshly cracked black pepper to taste
  • 1 handful fresh flat-leaf parsley or cilantro chopped (for garnish)

Instructions

  • Toss the chicken breast pieces in a bowl with a pinch of salt, pepper, and exactly half of the spice blend (cumin, coriander, cinnamon, paprika, and turmeric). Heat the olive oil in a deep skillet over medium-high heat. Sear the chicken pieces for 3 to 4 minutes until golden on the outside. Remove the chicken from the skillet and set aside on a plate.
  • Turn the heat down to medium. Add the diced onion directly to the same skillet with the leftover chicken juices and sauté for 4 to 5 minutes until soft and translucent. Stir in the minced garlic, grated ginger, and the remaining half of the spice blend. Stir continuously for 60 seconds to bloom the spices in the hot oil.
  • Pour the fresh-squeezed orange juice, chicken broth, and honey into the pan. Use a wooden spoon to gently scrape up all the flavorful browned bits stuck to the bottom of the skillet. Bring the liquid to a gentle simmer. If using saffron, crush the threads between your fingers and stir them in now. Return the chicken and its resting juices back to the pan. Cover tightly with a lid, lower the heat, and simmer gently for 12 to 15 minutes.
  • Take the lid off the skillet. Layer the thick, fresh orange rounds and the green olives directly on top of and around the chicken chunks. Leave the lid off and let the dish simmer uncovered for another 4 to 5 minutes so the orange slices warm through and release their aromatic essential oils straight into the reducing sauce.
  • Remove the skillet from the heat. Toss the freshly chopped parsley or cilantro over the top. Serve piping hot over a bed of fluffy couscous or rice.

🍊 The Science of Citrus: Why This Works

Why does this chicken breast stay so incredibly juicy? It all comes down to basic kitchen chemistry. Orange juice acts as a natural enzymatic tenderizer. The mild citric acid gently breaks down tough, tightly wound protein fibers in the chicken breast without turning the meat mushy. As it simmers under a tight lid, it locks in moisture, creating a silky, glossy pan sauce without requiring heavy creams, butter, or excessive oils.

💡 Fun Facts About the Dish

  • The Pot vs. The Recipe: The word tagine actually refers to the iconic Moroccan conical clay pot used to slow-cook stews. However, you don’t need fancy equipment! A deep skillet or a Dutch oven with a tight lid mimics the condensation process beautifully, dropping moisture back down onto the chicken.
  • The “Agrodolce” Balance: Moroccan cuisine is famous for balancing sweet and savory profiles. The addition of green olives isn’t an accident—the salty, briny punch of the olives cuts through the natural sugars of the orange and honey, anchoring it as a deeply savory dinner.
  • A Royal Herb: Saffron threads, traditionally used in this dish, are hand-harvested from the Crocus sativus flower. It takes roughly 75,000 flowers to produce just one pound of saffron, making it the most expensive spice in the world!
