Vegetarian CousCous Primavera

CousCous Primavera

Ingredients:

  • 1/2 cup water
  • 3/4 cup diced tomatoes with juice
  • 1 cup fine or medium plain couscous
  • 1 large zucchini, cut in small cubes
  • 1/2 red pepper cubed
  • 1 large onion , chopped fine
  • 2 cups of broccoli florets, chopped
  • 3 tablesppons olive oil
  • 1 tsp each salt,pepper,oregano, garlic powder
Method
  1. Combine the water and tomatoes in a small saucepan and bring to a boil.

  2. Place the couscous in a bowl and pour the hot tomato mixture

    over it. Stir to saturate the couscous and let stand .

  3. Heat the oil in a pan. Add the chopped vegetables.

  4. Cook until the vegetables are softened, 8-10 minutes

  5. Add the spices to the vegetables and stir 1 minute

  6. Add the couscous and combine with the vegetables – stir one more minute.

Serve on it’s own or as a side dish to fish or meat!
