Butternut Red Bean Soup
This is a hearty healthy soup that is so delicious. Can be made ahead and warmed up for a weeknight supper. Also a great lunch choice with a side sandwich or wrap. Let it warm your soul!
Ingredients:
1 tablespoon olive oil
1 tablesoon butter
1 large onion, finely chopped
2 to 3 cups butternut squash, cubed
4 cups chicken or vegetable broth
1 can red kidney beans
Heat oil and butter in a large sauce pan.
Add the onion and cook until soft and nicely caramelized.
Add butternut squash and cook until slightly softened – about 2 minutes.
Add 4 cups of broth and cook until squash is tender. Taste for salt and adjust to preference.
Add the beans and let simmer for 5 more minutes.
Top with finely chopped parsley if desired.
