Rapini Potato Pie
Ingredients:
3 medium potaoes
1 medium sweet potato
2sp salt.
1/4 cup butter
1/4 cup milk
1 egg
1/4 cup parmesan cheese
Sliced ham, optional
Extra parmesan
1/2 cup bread crumbs
Wash and prepare the rapini by cutting off the hard bottom part of the stems.
Cut the rapini in one inch pieces.
Boil 2 large pots of water and add 2 teaspoons of salt to each.
Once boiling add the rapini to one pot and cook until tender.
In the other, add the potatoes and cook until fork tender.
Drain the rapini and set aside. Drain the potatoes into a large bowl.
Add the butter and milk to the potatoes and roughly mash.
Add egg and parmesan cheese and stir to combine. Add the rappini to the potatoes
and combine well.
Oil an oven safe dish and sprinkle the bottom with bread crumbs
Layer half the potatoes in the dish. Sprinkle mozzarella on top.
Add ham if using, followed by the remaining potatoes.
Sprinkle any remaining parmesan and bread crumbs over the top and drizzle with olive oil
Bake at 350 until golden, about 40 minutes.
